Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.
Good to know:
- Water is the reference point: 1 ml weighs 1 g, so a US cup (236.6 ml) is 237 g and a metric cup is 250 g.
- That's why bakers weigh water for bread — grams and millilitres are the same number.
- For yeast doughs the temperature matters more than the weight: lukewarm, about 38 °C (100 °F), wakes the yeast up without killing it.
