Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.
Good to know:
- Spoon flour into the cup and level it with a knife — that gives about 125 g. Scooped straight from the bag it packs down to 140–150 g, enough to make a cake dry.
- Sifted flour is lighter, about 115 g a cup: for “1 cup sifted flour”, sift first, then measure.
- Bread flour (127 g) and whole wheat flour (120 g) weigh about the same per cup, so they swap cup for cup.
