Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.

Good to know:

  • In the US butter comes in sticks: 1 stick = ½ cup = 8 tablespoons = 113 g (4 oz), and a 1 lb box holds 4 sticks.
  • The tablespoon marks on the wrapper are the easiest way to measure: cut at the line, no cup needed.
  • Melted or solid, butter weighs the same — for “½ cup melted butter”, melt one stick.
