Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.

Good to know:

  • Granulated sugar is the easy one: it doesn't pack, so spooned or scooped, a US cup is about 200 g.
  • Caster (superfine) sugar has finer crystals and is used cup for cup in most recipes.
  • Cutting the sugar in a cake by up to a quarter usually works; more than that changes the texture, not just the sweetness.
