Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.
Good to know:
- Rolled (old-fashioned) oats are light and bulky: a cup weighs about 90 g. Quick oats are cut smaller and fit a little more in a cup.
- Steel-cut oats are far denser — about 160 g a cup — so don't swap them for rolled oats by volume.
- For one bowl of porridge: ½ cup (45 g) of rolled oats with 1 cup of water or milk.
