Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.

Good to know:

  • These numbers are for uncooked long-grain white rice: about 185 g a cup. Short-grain (sushi) rice packs denser, about 200 g.
  • 1 cup of uncooked rice makes about 3 cups cooked — enough for 3–4 side servings.
  • On the stove the usual ratio is 1 cup of rice to 1½–2 cups of water; rinse it first for fluffier grains.
