Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.

Good to know:

  • Milk is a little heavier than water, so a US cup weighs about 245 g rather than 237 g — close enough that most cooks treat millilitres and grams as the same.
  • Whole, skim and plant milks weigh almost the same per cup, so you can swap them by volume.
  • No buttermilk? Stir 1 tablespoon of lemon juice or vinegar into 1 cup of milk and leave it for 5–10 minutes.
