Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.

Good to know:

  • Heavy (whipping) cream weighs about 238 g a cup — practically the same as water or milk.
  • Whipped, it doubles: 1 cup of liquid cream gives about 2 cups of whipped cream.
  • No heavy cream for a sauce or soup? Mix ¾ cup of milk with ¼ cup of melted butter. It won't whip, though.
