Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.

Good to know:

  • Oil is lighter than water: a cup weighs about 218 g, not 237 g. Canola, sunflower and corn oil all weigh about the same.
  • Measure it in a liquid measuring cup at eye level.
  • Baking with oil instead of butter? Use about ¾ of the amount: cakes come out moister, cookies spread more.
