Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.

Good to know:

  • Honey is heavy: a cup weighs about 340 g, almost one and a half times as much as water.
  • Oil or wet the cup or spoon first and the honey slides right out — otherwise a good spoonful stays behind.
  • To use honey instead of sugar: about ¾ cup of honey per cup of sugar, 2–3 tablespoons less of the other liquids, and an oven 15 °C (25 °F) cooler.
