Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.

Good to know:

  • Unsweetened cocoa powder is light: about 85 g a cup, or about 5 g a tablespoon.
  • Natural and Dutch-process cocoa weigh the same but don't always swap: recipes with baking soda usually count on the acid in natural cocoa.
  • Cocoa clumps — sift it, or whisk it with the sugar before the liquids go in.
